Tilapia and Rosemary Potatoes

So, I have decided that I love cooking so I will start a blog regarding my recipes I create along with some ideas I gain from some professional chefs from food network website or cookbooks. I'm hoping that some people will try my recipes and give me some feedback on my ideas. I love to cook not only cause cooking is fun for me but because I love to make my family happy. My husband is my personal fan as he always brags about my cooking to other people. Anyways, here goes my first recipe:

Tilapia preparation

5 (3 oz) Tilapia fillet, skinless and boneless
5 pieces of garlic, minced
1/4 cup balsamic vinegar
2 tablespoons worcestershire sauce
1 teaspoon kosher salt (to taste)
1 teaspoon black pepper

Mixed all ingredients and let it soak for 10 minutes. Now cook for approximately 20 minutes on grill (depends on type of grill). Cook at medium to low temperature. I used my George Foreman grill.

Potatoes preparation
6 white potatoes with skin, cut into small wedges to your liking
1 tablespoon butter
1/2 small onion diced
1 tablespoon olive oil
1 tablespoon Rosemary
3 pieces of garlic, minced

Heat pot with butter and after butter starts bubbling add the onions and let them cook for 1 or 2 minutes. Now, add the olive oil, rosemary, and garlic. Cook on the stove top for approximately 10 minutes at medium heat and than place in oven at 365 degree for 30 minutes or until potatoes are tender.

* I also steam some broccoli since it is the one vegetable that my husband does not mind eating.

Okay, so please do leave a comment and feel free to say whatever you think. Thanks.

  2. Sounds yummy! I love Tilapia, so I'll have to try it. We typically cook Tilapia "breaded" in a mixture of mustard, sugar, and egg and then dipped in crumbled ritz crackers. We then cook it on a skillet in some olive oil over medium heat. Not the healthiest, but oh-so-good!

  3. That sound good. I thought about breading it but I seem to not have good luck. Once, I tried breading chicken and frying it and it became a huge mess, lol. I would like to try making it again but next time I will buy the tempura mixture to batter the fish and I also would like to buy a fryer to make it easier then using a pot. Anyways, thanks for posting a comment. Hope you like it and let me know what you think of it. I'm trying to cook healthier so not much went into making it but I like to eat simple anyways : ). I should post another recipe that involves salmon...maybe next post will be it. I used horseradish sauce and cilantro.
