Chicken with horseradish mustard and sweet potatoes




I felt a little creative today so I decided to post another recipe. I'm not sure how often I will be posting new recipes but I will try my best to make up something new of my own. Here is the recipe:

Chicken preparation

8 pieces of foster farm chicken, boneless and skinless thighs (I usually get the prepacked bags from Costco)
2 tablespoon stoneground with horseradish mustard (Safeway brand)
1 tablespoon olive oil mayonnaise (Best Foods brand)
1 teaspoon dill paste
1 teaspoon kosher salt (you may add more but I don't like to use too much salt)
1 teaspoon sea salt
5-6 pieces of garlic, diced
1 small red onion cut into medium size wedges
1 teaspoon black pepper
2 tablespoon olive oil

Preheat oven to 375 degrees.

First, placed the onions a baking glass ware and drizzled them with about 2 tablespoon of olive oil and sprinkled with the sea salt and pepper. Than I prepared the chicken by adding the mayonnaise, stoneground horseradish mustard, kosher salt, and dill paste. After I mixed the chicken and ingredients well, I placed the chicken on top of the onions and added the garlic on top of the chicken. Cook chicken in oven for approximately 35 to 40 minutes.

Sweet potatoes preparation

5 medium size sweet potatoes, peeled and diced
2 tablespoon butter
2-3 tablespoons orange blossom honey (Sun Harvest brand, got it at smart and final)
1 teaspoon nutmeg

Place butter on pot at medium heat. When butter begins to bubble add the sweet potatoes and mix well until most are cover with some butter. Add the nutmeg and honey and mix again. Lower temperature to medium low and let it cook for about 20 minutes.
