chicken potatoe patties


So, I decided to post a recipe that my mother has made for me since childhood. I'm not sure if anyone I know have tried this before but I thought I would post it anyways. It is very easy but time consuming since you have to fry the patties. So, here it goes:

Ingredients:


* Kraft grated Parmesan cheese (the one that comes in the bottle)
* Peeled Potatoes (I used like 15 small potatoes), boiled them with some salt to taste
* Cook the chicken apart (I seasoned my chicken with chicken flavor bouillon, brand Knorr), shred chicken after cooking
* 4 eggs, beaten

Instructions:

Mash the potatoes with some milk to get the consistency of mash potatoes. Using some clear food wrapping place about 2 tablespoons of mash potatoes (enough to form a patty) and some chicken. Now use the food wrapping to mold it into a patty and place it in a bowl with the Parmesan cheese just enough to cover it than dip it into the beaten eggs. Continue to shape some with hands and add to already prepared heated olive oil (I used a frying pan since I don't have a fryer). Since it is a little messy, I recommend having some paper towels near and frequent rinsing of hands so you don't make a big mess. Just cook until each side is golden since all the ingredients are already cooked. Place the ones you fried on a plate cover with paper towels to remove some of the oil from the patties. Not necessarily the healthiest but I figure I would make them.
